i have 6 bags of white chocolate chips right now for no good reason other than I see them at the store every so often and think I want to make macadamia nut cookies and then I never do and I forget I have them. I thought I’d throw them in here and that is my favorite part about them. These don’t have any sugar except for the topping so the white chocolate adds some sweetness. Add some more of the chips if you want them sweeter.
I prefer to cook with fruits and vegetables that are in season, but sometimes during the winter I get a little bored with the options. Anjou pears are actually in season in the winter and it’s a nice refresh from all of the other produce available right now.
This banana bread only has 1/2 cup of brown sugar for the filling and no butter at all, and you’d never be able to tell. It is so rich and creamy. I love using applesauce to replace the butter because it also adds sweetness so you can cut out sugar. I had to leave sugar for the cinnamon swirl part, because what’s a cinnamon roll without the swirl?
