Not going to lie, I’m not a huge raw kale fan. It can be so fibrous and seems to take forever to chew. So I’ve never been big on using kale for salads. However, I do like sautéed kale, and it’s cold out, so I decided to make a wilted kale salad.
I love caprese anything because it’s so light, summery and refreshing. This is such an easy dish to throw together, you can serve it warm with fresh cooked chicken or pack it up in the fridge and eat it week. I love all the bright colors!
I love recipes like the Slow Cooker Cuban Pulled Pork because it always makes such versatile leftovers! Cooking for a family of two can be difficult, because while you definitely end up using the leftovers the next night or for lunch, sometimes you get tired of the same thing.
