Curry Chicken Salad

I love rotisserie chicken because it saves so much time, it’s inexpensive, and the meat is always flavorful and not dried out. It definitely makes chicken salad a lot easier to prepare!

Prosciutto Mozzarella Bites

This is so easy it’s hardly a recipe. But they’re so good! You can never go wrong with prosciutto and mozzarella. Perfect as an afternoon snack or when you want something quick and easy for guests. I even packed them on a picnic!

Slow Cooker Thai Coconut Curry Chicken Soup

I don’t think I could ever get tired of coconut curry anything. What I love most about this dish is that it’s super filling, lots of veggies, and you get a big bowl for not that many calories.

Salmon Pasta Primavera

Primavera means spring in Italian, so obviously this is the perfect recipe to make this time of year! No need to feel guilty about this pasta dish because it is packed with veggies. There isn’t really a sauce – the dish gets it’s flavor from the olive oil the veggies roast in, the pasta water and parmesan cheese. It’s so filling!

Sheet Pan Dijon Chicken

This might not be very impressive looking, but it is so easy and you probably have most of the ingredients already! The Dijon mustard and white balsamic vinegar really help to keep the chicken moist, which boneless, skinless chicken breast tends to dry out easily.

Spicy Thai Peanut Shrimp with Noodles and Zoodles

There’s nothing better than a spicy peanut sauce. And noodles. And noodles mixed with zoodles so you can have more and still feel ok :-). While I love zoodles, I can’t help but feel a little unsatisfied if there aren’t any regular noodles too. If you’re trying to really lower your carb intake, feel free to only use zoodles.

Lamb Gyro Bowl

I love gyros as a fast food option because they’re really filling but a lot healthier than most other options. When I make them at home, I always make it into a grain bowl.
