White Chocolate Snickerdoodle Banana Muffins

I love all things snickerdoodle.

i have 6 bags of white chocolate chips right now for no good reason other than I see them at the store every so often and think I want to make macadamia nut cookies and then I never do and I forget I have them. I thought I’d throw them in here and that is my favorite part about them. These don’t have any sugar except for the topping so the white chocolate adds some sweetness. Add some more of the chips if you want them sweeter.

Stovetop Mac and Cheese

This is so easy and there’s no powdered cheese.

The sauce is simply made out of reserved pasta water, three different cheeses and yogurt to make it creamy.

Smoked Salmon Benedict

I’ve been thinking about making an eggs benedict recipe for awhile now, and I kept thinking I would make a hollandaise-esque sauce by using yogurt. But then Skinnytaste posted one without any sauce because the egg yolk is rich enough. It’s so true! Look at that ooze all over the plate! Save yourself the calories and the stress of making a hollandaise at home and leave it for when you’re out to brunch.

Baked Spaghetti Squash Arancini

Arancini are little, fried, cheesy risotto balls. This is a popular way to use leftover risotto in Italy. I used spaghetti squash instead of risotto and cooked a whole one for it, but this is the first perfect recipe if you have leftover squash to whip up a few

Cardamom Baked Pear

I prefer to cook with fruits and vegetables that are in season, but sometimes during the winter I get a little bored with the options. Anjou pears are actually in season in the winter and it’s a nice refresh from all of the other produce available right now.
