2017 has been an interesting year. Not only did I get married, but I’ve learned a lot about myself too.
I have been completely slacking on posting. To be honest, the stress of planning a wedding completely exhausted me and I needed time to recuperate. But the holidays have brought me new kitchen gadgets and I’m ready to start creating again! Who else got an Instant Pot?!
I am amazed and so unbelievably thankful for the support I’ve received from both friends and strangers. Thank you all for the feedback and taking a chance on a new blogger! I love hearing from you all! So now I bring to you the top 5 recipes of 2017!
#5 Taco Wrap Supreme
My first recipe! And probably my husband’s favorite of all time. I learned a lot with this post – don’t take pictures without natural light or they have a yellowish hue to them. I am going to update this picture someday, but apparently if you advertise healthy Taco Bell, people will make it regardless of what the picture looks like.

My second recipe! Who doesn’t like a fried egg on top?!
#3 Slow Cooker Mexican Adobo Chicken
I love slow cooker recipes and now I can choose to make them way faster in my Instant Pot! Definitely will have to make this in my pressure cooker and update the recipe with that option as well 🙂
#2 Creamy Butternut Squash Pasta
Guilt-free mac and cheese – what’s not to love? Definitely going to speed up the cook time in my Instant Pot – stay tuned!
#1 Pesto Chicken Caprese Salad
The most popular recipe of 2017! I love the brightness that pesto adds to dishes. I made this in the summer and served it cold, but it would be just as delicious served warm in the winter. Also, look how much my photography improved with this one! I still have a lot of learning to do in that department, but luckily my two closest friends are photographers and I can always bug them for tips 🙂

Easy Vegetable Pho
I love this recipe because it is SO easy, SO quick, SO healthy and has SO much flavor. It’s the perfect weeknight meal!
