Salmon Pasta Primavera

Primavera means spring in Italian, so obviously this is the perfect recipe to make this time of year! No need to feel guilty about this pasta dish because it is packed with veggies. There isn’t really a sauce – the dish gets it’s flavor from the olive oil the veggies roast in, the pasta water and parmesan cheese. It’s so filling!

Lemon Thyme Salmon with Roasted Root Vegetables

I bought this huge 10 pound bag of root vegetables at the farmers market and I knew I wanted to make a sheet pan dinner with them. I’ve seen sheet pan dinners often on The Kitchen (one pan plan!) and on SkinnyTaste and have been wanting to make one. Who doesn’t like a recipe that uses hardly any dishes and where everything is ready at the same time?!

Smoked Salmon Benedict

I’ve been thinking about making an eggs benedict recipe for awhile now, and I kept thinking I would make a hollandaise-esque sauce by using yogurt. But then Skinnytaste posted one without any sauce because the egg yolk is rich enough. It’s so true! Look at that ooze all over the plate! Save yourself the calories and the stress of making a hollandaise at home and leave it for when you’re out to brunch.
